Easter Hiking Plans

It is hard to believe that Easter is almost here! With only 96 days until we hit the trail in Maine, we are trying to get miles in. The last time we had a quick backpacking trip planned, work blew up on that Friday and we couldn’t get any miles in. Of course, we’ve been working out here at home and have even been doing kettlebells to get some strength training in. This Friday after work, we hope to get 5 miles in, set up camp and get 5 miles in on Saturday before returning home. With it being Easter, we want to be close to home for a quick trip.

We have a tradition of eating lamb for Easter dinner and Sean wants to keep up the tradition. After church I will get lamb cooked up for a traditional Easter meal. Sean is planning on making sides to go with the lamb. The three of us make a good kitchen crew. After lunch, I’ve got to head out to Eastern North Carolina Sunday evening as I’m rolling out a new client this month. Very excited about the growth of our company!

How has the weather been where you live? We had beautiful weather the last two days. Yesterday it was in the 70s, so after work we road our bikes around the lake. We sure do love that the sun doesn’t set until after 7pm now! More time to get exercise in at the end of the day. We got 14 miles in yesterday! The hills were difficult as it was the first ride of the season, but we made it around the loop trail twice.

I have *only* 511.8 miles in so far this year. Sighs. That is an average of 5.6 miles per day, so when I look at it that way, it seems like a bit of an accomplishment. LOL I wonder how other backpackers get ready to hit the trail. I know many of the YouTube AT hikers say they just decided to do it and that they had their tail legs after a few weeks. There are folks who gear up and do many, many section hikes before they decide to thru hike the AT or another trail, as well. It’s not a one size fits all approach.

We have also made some more meals. Currently we have cooked cabbage, cajun pork and peppers, Brussels sprouts and sugar free pudding in the freeze dryer. I cooked the cabbage because it was going to go to waste after we made corned beef for St. Patrick’s Day. We have freeze dried quite a few single servings of leftovers, too. It stores longer than in the freezer with the added benefit of not using up freezer space. No more leftovers going to waste!

For those of us who have full time jobs, it can be a struggle to get daily miles in! I do thank my lucky stars that I am able to get in the miles that I do. God is good. Life is good. Good Lord willing, we will be standing at the entrance to the 100 mile wilderness in July.
